Description: 2 Italian sausage (remove casing) ,or ground1/2 red bell pepper,1/2 yellow bell pepper,1/2 lb smoked turkey sausage,1 small onion,1 tbs Italian seasoning,1/2 c ricotta cheese (whole),1 c cottage cheese,16 oz package shredded mozzarella cheese,1 tbs fennel seeds,1 egg (slightly beaten),1/2 tsp black pepper,1 package lasagna noodles Fill a large stock with water on high heat bring to a boil add salt and then lasagna noodles cook until noodles are soft not fully done. Remove from pot rinse with cold water lay flat on cookie sheet to dry. In a med bowl add ricotta, cottage cheese, fennel seeds, Italian seasoning, egg and black pepper mix together set aside until needed. In a saute pan add 2 tsp olive oil let heat then, add grounded Italian sausage, onion, red and yellow bell peppers until done. Pre heat oven 375 degrees. Now we are ready to assemble the lasagna rolls. In a baking pan add spaghetti sauce to cover bottom of the pan, then take lasagna noodle add meat mixture, then ricotta mixture, mozzarella cheese more sauce, now roll and place in baking pan with open side down repeat until noodles and mixture have been used, on top add remaining sauce and cheese. Place in oven cover with foil 15 minutes, remove foil and place back in oven uncovered 15minutes. Remove and serve with a small green salad.
